If you've been following this strip closely, you will remember seeing this creature previously. Twice, in fact.
The reason the lady looks nothing like she did in the previous strip is that there was a contractual problem over the weekend and she had to be replaced with a female impersonator.
The reason the creature doesn't look quite as it looked previously is that it's still evolving.
